Frozen Chocolate Covered Peanut Butter Bananas

A sweet treat with melt in your mouth texture, these Frozen Chocolate Covered Bananas are the perfect bite sized dessert. With a creamy peanut butter layer and crisp frozen chocolate coating, these banana bites are irresistible!

Ingredients

  • 2 large bananas
  • cup peanut butter
  • 1 cup chocolate chips
  • 1 tbsp coconut oil
  • Optional Toppings: Shredded coconut flakes, cacao nibs, mini white chocolate chips, chia seeds, sprinkles, chopped nuts, goji berries

Instructions

  • Peel and slice your bananas in ~¼” slices.
  • Line a baking tray with parchment paper and place banana slices in a single layer. To half of the slices, top with a layer peanut butter.
  • Top each banana slice topped with peanut butter, with another banana slice so the peanut butter is sandwiched between 2 banana slices.
  • Move to the freezer to harden, for at least 45 minutes.
  • Right before pulling frozen peanut butter banana bites out of the freezer, melt chocolate chips and coconut oil together. Microwave in 30 second increments until the chocolate reaches a smooth consistency.
  • Remove frozen peanut butter + banana bites and dunk each in chocolate, placing back on the parchment-lined baking tray.
  • Top with your favorite toppings and move to the freezer to harden for an additional 30 minutes.
