Flavorful stir fry with a spicy and creamy tahini sauce. Quick and easy to make, this is perfect for your next weeknight dinner.
Spicy Tahini Riced Cauliflower Bowl
- 1 lb bag frozen riced cauliflower
- 4 Tbsp olive oil
- 1 16 oz package super firm tofu drained & patted dry (pressed if necessary)
- 1 ea. medium onion chopped fine
- 3 cloves garlic minced
- 1 ea. red bell pepper chopped
- 2 ea. green onions chopped
Spicy Tahini Sauce
- 1/4 cup tahini
- 1/4 cup water
- 2 Tbsp fresh lemon juice ~1-2 large lemons
- 1 tsp roasted sesame seeds
- 1 Tbsp chili garlic sauce
- 1 Tbsp red pepper flakes
- 1/2 tsp salt
- black pepper to taste
Start by draining and pressing your super firm tofu. Cut into cubes and coat in 2-3 tbsp olive oil and 1 tsp each of salt & black pepper. Roast in the oven at 350F for 25 - 30 minutes, or until tofu has started to brown.
Add 2 tbsp olive oil to a large non stick saute pan over medium to medium high heat. Once hot, add you onions and cook until translucent, 2-3 minutes.
Next, add your bell pepper + 3 cloves of garlic and cook for another 3-5 minutes.
Add your frozen riced cauliflower and cook for another 8-10 minutes or until cooked to your preferred texture.
While the cauliflower is cooking, make your sauce by adding all ingredients to a bowl and whisking together.
Once riced cauliflower stir fry has cooked, stir in your roasted tofu, chopped scallions, salt, and the spicy tahini sauce. Mix together until everything is evenly combined.
Add additional salt and black pepper to taste. Garnish with extra chopped scallions, sesame seeds, and red pepper flakes. Enjoy!
