Less than 20 minutes start to finish to have these chocolate-y, gooey on the inside, crisp edges, and deliciously chewy Peanut Butter Oatmeal Chocolate Chunk Cookies ready to go!

Ingredients

  • 1 cup natural creamy peanut butter
  • 1 cup coconut sugar
  • 1 tbsp coconut oil melted
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup rolled oats
  • 1 tsp baking soda
  • Pinch salt
  • 1 3 oz bar Theo Chocolate 85% Dark Chocolate chopped

Instructions

  • Preheat oven to 350F and line a baking sheet with parchment paper
  • Using a hand blender, blend together peanut butter, coconut sugar, and coconut oil.
  • Add eggs + vanilla extract and blend again.
  • Stir in the remaining dry ingredients - rolled oats, baking soda, salt, and chopped @theochocolate bar.
  • Form into balls and slightly press down so they are flat.
  • Bake in the oven for 8-10 minutes or until bottoms of cookies have started to brown.
