BROCCOLI

SOUP

In a large pot heat olive oil  then add onions and garlic. Let cook until clear and softened before adding finely chopped broccoli florets. 

Step One

Make cashew cream by blending raw cashews with water on high for 5 minutes. Then add to onion, garlic, and broccoli mixture.

Step Two

Add water, nutritional yeast, salt, and a pinch of cayenne powder to the broccoli and cashew cream mixture. Stir to combine.

Step Three

Once well combined, cover and let the broccoli soup simmer for 20 minutes. Occasionally stir as the soup may get foamy!

Step Four

Serve hot and enjoy!
