I LOVE salad kits. They make life so much easier, especially at dinner time when I’m already rushing to throw stuff together. For National Salad Month, Taylor Farms launched three new chopped kits and I’m excited to be sharing a recipe for their Roasted Garlic Chopped Kit!
I’m a firm believer that you can never have too much garlic, so for all you garlic lovers – this one’s for you 🙂
This Warm Roasted Garlic Potato Salad is filled with Spring + Summer vegetables making it a filling and healthy side that would be great to bring to any potlucks, cook outs, or Summer parties! It also goes well with just about anything making it the perfect side dish for any occasion.
How to Make Roasted Potato Salad
Shout out to the Taylor Farms Roasted Garlic Chopped Kit for helping to make this recipe super easy to whip up! You literally do less than 10 minutes of prep sautéing your vegetables, wait 25-30 minutes while the potatoes roast in the oven (quick Netflix sesh, anyone?), and then toss everything together.
There ya have it, three easy steps to the perfect Spring/Summer side dish that is not only quick, but also delicious.
Why I love this Warm Roasted Garlic Potato Salad
It’s made without mayo so it doesn’t feel as heavy as your usual potato salad. Instead, you use the Creamy Garlic Dressing that comes with the Chopped Kit. I call that #winning – having the dressing ready to go just makes everything SO much easier!
It’s not your average potato salad. With the addition of roasted garlic, sautéed asparagus + snow peas, fresh radish, and Taylor Farms Chopped Kit greens, this salad is anything but boring. You also serve it warm, straight out of the oven, which is a nice switch up from your typical potato salad.
It’s EASY! The Taylor Farms Roasted Garlic Chopped Kit makes this side dish SO easy to throw together with their pre-made dressing, and fresh, pre-washed greens mix that includes: chopped romaine, shredded broccoli, cabbage, celery, green onion, and parsley.

Ingredients
- 1 bag Taylor Farms Roasted Garlic Chopped Kit
- 1.5 lb mini potato medley or sub potato of choice
- 3 cloves garlic minced
- 1 tbsp olive oil
- 1 tbsp nutritional yeast
- 1/2 tsp salt
- 5 stalks asparagus
- 1/2 cup snow peas sliced diagonally
- 1 ea. radish sliced thinly (for garnish - optional)
Instructions
- Preheat oven to 375F and line a baking tray with parchment paper. Wash potatoes and cut in half vertically and horizontally.
- Add potatoes to a large mixing bowl along with olive oil, minced garlic, nutritional yeast, and smoked white cheddar cheese (from salad kit), and stir until potatoes are evenly coated.
- Move to parchment-lined baking tray, making sure potatoes are in a single row so they get evenly cooked. Bake at 375 for ~25-30 minutes or until browned.
- While potatoes are cooking, cook your snow peas in a saute pan over medium heat for 1-2 minutes or until tender. Repeat with asparagus, sauteing for 3-5 minutes, or until tender.
- Once potatoes are finished cooking, remove from the oven and toss with half of the Creamy Garlic Dressing from the Roasted Garlic Chopped Kit. Add your sauteed asparagus and snow peas and stir to combine.
- Stir in 2 cups of Taylor Farms Roasted Garlic Chopped Kit salad greens and croutons (from kit). Mix together until combined. Add additional Creamy Garlic Dressing and additional greens (from kit) to taste/preference. Serve warm.
