I think Carrot Cake might be one of my favorite flavor combinations. Enter – these Vegan Carrot Cake Energy Balls. The perfect healthier alternative to bring to any Spring gatherings or keep in your fridge and snack on whenever your hungry.

Vegan Energy Balls on a white plate. Covered in shredded coconut flakes.

How to make Vegan Energy Balls

For this recipe, you start by blending together a base of half dates and half raisins (although you can easily do just dates or just raisins if you don’t have one of these ingredients on hand). Personally, I like the addition of the raisins in this recipe because it adds to the carrot cake flavor.

After blending your dates & raisins in a food processor (should form into a large ball), you then add in your wet ingredients and blend, followed by your dry ingredients, and blend.

Lastly, you pulse in the final add in’s to keep them chunky – shredded carrots, toasted coconut flakes, and roasted pecans.

Finish them off by rolling into balls and coating in shredded coconut flakes for extra coconut flavor in every bite.

Bliss Balls, Raw Bites, Energy Balls, Date balls

Whatever you call them, here are a few reasons I think they’re great:

  • a great portable, on-the-go snack
  • you can make a big batch and keep the extras frozen in your freezer
  • naturally sweetened with dates
  • healthier dessert + snacking alternative

They should last for 8-10 days in an airtight container in the fridge! Hope you love them 🙂
