Have dessert and have it fast with this Vanilla Mug Cake! With minimal ingredients and a 90 second cook time, this easy Vanilla Mug Cake is sure to become a favorite. It’s perfect for those times when you want something sweet but don’t necessarily want to bake a whole cake!
The cake itself is moist and fluffy or ooey gooey depending on your preference and baking time. Then the classic vanilla flavor is elevated with the fun addition of sprinkles or whatever choice of add ins you prefer!

Ingredients in Vanilla Microwave Mug Cake
Almond Flour – Is my favorite gluten and grain free baking flour that keeps this mug cake super moist. For best texture use blanched almond flour, my go-to is Bob’s Red Mill!
Coconut Sugar – Gives just enough sweetness to this mug cake and keeps it refined sugar free. I love the slight caramel flavor of coconut sugar as well!
Baking Powder – Even a microwave mug cakes need a little support! The baking powder acts as a leavening agent to help this mini cake rise.
Egg – Adds structure to the cake and I have not tested any vegan substitutes.
Neutral Oil – You want to use a neutral oil so that it doesn’t overwhelm the vanilla flavor of the cake. I used sunflower oil but avocado oil may work as well!
Clear Vanilla Extract – This is a tip I learned from @christinatosi – the clear vanilla extract gives the mug cake more of the boxed cake flavor you would typically associate with funfetti cakes. Otherwise sub with regular vanilla extract!
Sprinkles – Any sprinkles will work here although I recommend going with the rainbow variety for a *truly* authentic funfetti feel 😉
Coconut Cream – This is an easy and pantry friendly sub for ice cream! I love the creamy texture of coconut cream with this mug cake + it’s dairy free/vegan.
How to Make a Vanilla Mug Cake
1. Whisk together dry ingredients (excluding sprinkles) in a microwave-safe coffee cup.
2. Stir in your wet ingredients.
3. Add sprinkles – stir minimally otherwise the color will start to bleed.
4. Microwave for ~1min 15 sec if you like your mug cakes ooey gooey. Microwave it anywhere from 15 – 30 seconds additionally if you don’t.
5. Optional: top with some room temp full fat coconut cream + extra sprinkles then dig in!
Is Mug Cake Dairy-Free?
Yes it is! Not only is this a dairy-free Vanilla Mug Cake, it’s also gluten, grain, and refined sugar free too. It’s a tasty paleo dessert option, whenever you’re craving something sweet. The optional coconut cream is also a great dairy-free alternative to ice cream for topping!
Additional Add In Ideas
Now this is the fun part, choosing your add ins! This Vanilla Mug Cake is great base for whatever add ins you’d like and can be completely customized for your preference.
I chose the rainbow sprinkles for a funfetti feel but the options are truly endless. You could try chocolate chips, marshmallows, chopped peanut butter cups, berries, cinnamon streusel, chopped dates, or nuts, … the list goes on and on!
Mug Cake Tips
While mug cakes are easy to make, there are still some tips and tricks to follow for the *optimal* mug cake experience.
- Mug size matters! To prevent overflow and spilling precious cake batter, use a large mug around 14 ounces in size or large enough to ensure the batter doesn’t pass the half-way mark of the mug.
- Once it’s finished baking, the mug will be very hot! Remove from the microwave and carefully set aside to cool before diving in.
- Want to meal prep dessert? Great! You can bake the mug cake, let it cool, cover, and then set it aside to eat later.
- This is a Vanilla *Mug* Cake for a reason, please do not bake this in the oven! Baking in a mug means microwave only for this cake.
