Flourless Peanut Butter Cookie Recipe
For this recipe, you start by mixing together your peanut butter and coconut sugar with a hand mixer. I found that this recipe generally does better with a nut butter that is on the thicker consistency side (i.e. jiff or skippy). Alternatively, I would go with a thicker natural peanut butter like Georgia Grinders.
Second, you’ll add in the remaining wet ingredients (egg, coconut oil, vanilla extract), and beat again with the hand mixer until combined. Follow this by adding in the cassava flour, cocoa powder, and baking powder, blending on low speed.
Lastly, add your chocolate baking chips and chopped peanuts, stirring until just combined. Form into balls, flatten, and bake for 10 minutes. That’s it for these chewy Chocolate Peanut Butter Cookies!
Are Flourless Peanut Butter Cookies Gluten Free?
Yes! These cookies are not only gluten free, but they are also grain free because they are made with cassava flour. My favorite brand is Otto’s Cassava Flour (made from the root vegetable, yuca), and I find it helps adds the perfect chewy consistency to these cookies.

Ingredients
- 1 cup peanut butter thick consistency works better
- ⅔ cup coconut sugar
- 1 large egg
- 2 tablespoons coconut oil
- 1 teaspoon vanilla extract
- ¼ cup cassava flour*
- ⅓ cup unsweetened cocoa powder
- ½ teaspoon baking powder
- ⅓ cup chocolate chunks**
- ¼ cup roasted/unsalted peanuts chopped
Instructions
- Preheat oven to 350 degrees Fahrenheit and line a baking tray with parchment paper.
- To a large mixing bowl, add your peanut butter and coconut sugar and beat with a hand blender for 30 seconds - 1 minute, until combined.
- Next, add your egg, coconut oil, and vanilla extract to the same bowl, beating again on medium-high speed for an additional minute.
- Add cassava flour, cocoa powder, and baking powder and mix on low with hand blender until combined.
- Stir in chocolate chunks and chopped peanuts until just combined.
- Roll dough into 12 - 14 balls and place on the parchment-lined baking tray. Flatten with your hand so they are still ~½ inch thick.
- Move tray to the oven and bake at 350 degrees Fahrenheit for 10 minutes. Remove and let cool for 10 minutes before handling.

Yummy!! Made these on a whim because I was craving peanut butter cookies and only had 1/4 cup of cassava flour left in the house. They were amazing. Omitted the chocolate chunks but will add next time. Great texture!

Can I sub the cassava flour for coconut or almond flour?

Hi Allison! Unfortunately I haven’t tested this recipe with either of those substitutions and cassava flour acts very different then both of those so it’s not something I can confidently recommend. I do have tons of other cookies / recipes on my site that don’t use cassava flour if you check out the dessert section 🙂
