Have you tried making homemade granola before? No? Me either, until this Cinnamon Spice Coconut Granola came into my life. Now, I just can’t go back to the store bought granola.

I used to have this idea that making your own granola was a difficult, time consuming ordeal so I never attempted making my own. I was SO wrong. Only 15 minutes prep and no chopping involved. You pretty much just heat up your wet ingredients on the stove, throw your dry ingredients in a large mixing bowl, and bring em’ together. The longest part is waiting for the granola to bake, but just put on a Netflix show and it will be ready when you’re done 😉

This cinnamon spice coconut granola recipe comes from my Mom, and let’s be real – any recipe handed down by a family member gets automatic street cred. Besides from being super easy to throw together, I love this recipe because it’s:

  • refined sugar-free
  • loaded with nuts (we’re taking 5 cups here!)
  • full of warm Fall spices from the cinnamon, cardamom, and orange zest
  • the perfect addition to all food – goes great on smoothies, yogurt, toast, fruit, roasted sweet potatoes, plain. My pumpkin spice overnight oats. I think it’d be hard to come up with a list of things this granola didn’t taste good on!

If you’ve been debating whether or not you should attempt homemade granola, let this recipe be your first! I promise you will have zero regrets. Well, you may regret that you’ve waited so long to try making your own granola.

Ingredients

Wet Ingredients

  • 3/4 cup water
  • 1/3 cup coconut oil
  • 3/4 cup coconut sugar
  • 1 orange zest
  • 1/2 tsp salt

Dry Ingredients

  • 1 cup sunflower seeds raw
  • 1 cup pepita seeds raw
  • 1 cup walnuts raw
  • 1 cup pecans raw
  • 1 cup sliced almonds raw
  • 5 cups old fashioned rolled oats
  • 3 Tbsp cinnamon
  • 1.5 Tbsp ground cardamom
  • 1 cup unsweetened shredded coconut (added in last 15 minutes of cooking)

Instructions

  • Preheat oven to 275F and line two baking sheets with parchment paper.
  • Combine all wet ingredients in a small pot, and bring to a boil on the stovetop. Turn heat to medium and cook for 5-10 minutes, or until sugar is dissolved.
  • Meanwhile, combine all dry ingredients (except coconut flakes) in a large mixing bowl.
  • Once sugar is dissolved, pour hot liquid over dry ingredients and stir thoroughly. When the dry mixture is evenly coated, spread granola mixture between your two parchment-lined baking trays.
  • Bake for 1 hour at 275F, rotating pans 180 degrees after 30 minutes. Add coconut flakes in the last 15 minutes of baking to ensure they don’t get too toasty.
  • Cool completely before storing granola in an airtight container.

✨MY MOM’S NOT SO ‘SECRET SAUCE’ NOODLE STI ✨MY MOM’S NOT SO ‘SECRET SAUCE’ NOODLE STIR FRY* featuring @beyondmeat, a veggie and protein filled dinner you need to try for dinner!

Now what’s the secret to this sauce? The secret is that it’s so easy to make, just 5 simple ingredients, and the perfect way to add lots of flavor! I also made sure to add the new Beyond Beef with avocado oil for extra delicious flavor and protein, a whopping 21 grams per serving! This is the 4th generation of @beyondmeat and the flavor is the best yet 👏🏼

Here’s everything you need to make this for dinner this week:

My Mom’s Not So ‘Secret Sauce’: 
⅔ cup mirin
⅔ cup sake
⅓ cup soy sauce
2 tsp fresh garlic, minced
2 tsp fresh ginger, finely minced 

Noodle Stir Fry:
4 tbsp olive oil, divided
⅓ cup red onion, finely diced 
3 cloves garlic, minced 
16oz Beyond Beef 
1 tsp salt
6 oz shiitake mushrooms, sliced into thin strips
1 small red bell pepper, cut into thin strips
2 cups broccoli, cut into bite-sized florets
1 cup bean sprouts
10 oz ramen noodles, cooked al dente (1 minute less than package instructions)
⅓ cup fresh cilantro, finely chopped
3 scallions, thinly sliced
Chili crisp drizzle, optional garnish

Green Goddess Dressing:
2 scallions (washed & roots cut off)
½ cup fresh cilantro (loosely packed leaves & tender stems)
¼ cup fresh basil leaves 
¼ cup full fat greek yogurt
2 tbsp olive oil
2 tbsp lemon juice 
2 tbsp water
2 cloves garlic
½ tsp kosher salt + move to taste

Seared Shrimp:
1 lb shrimp, peeled & deveined with tails removed (I used size 22-25 ct)
1 tsp chili powder
¾ tsp kosher salt
½ tsp smoked paprika
¼ tsp cayenne
2 tbsp olive oil, divided

Grilled Veggies
½ red bell pepper, seeded & cut into 1” pieces
1 small zucchini, cut into half moons
½ bunch asparagus, ends removed and cut into 1” pieces
1 tsp kosher salt
2 tbsp olive oil 

Salad:
5 cups butter lettuce (1, 4.5oz container)
2 cups baby arugula
1 cup radish microgreens
1 cup marinated quartered artichoke hearts (1, 6.5oz container)
½ cup feta, cubed
⅓ cup roasted sunflower seeds
